What kind of website I do for a client who wants to be able to edit their own pages easily?

My client is a teacher who wants make a website with AP chemistry class and his class of Forensic Sciences. She wants to include: curriculum, lesson plans, labs, assignments, examples of work students, etc, as the content of the film as well and contact form. I'm pretty sure the best way to go is a CMS, but I'm not sure that CMS will be the most easy to use and understand it once you have it up and running. For example, I know it's hard to learn and use Joomla! especially when it comes to new pages, because pages are referred to as "articles" and everything must be linked to an article just right, etc. What you think? (Also, I would like to keep in touch with the answering my question in case I have more questions.) PS I have experience with CMS. I've worked with Joomla, DotNetNuke and Drupal. It has never been a big fan of wordpress, but I know there are a number of CMS out there.
